And I am Back….. Monday, Nov 28 2011 

Wow!  What a spectacular holiday with family, friends, and amazing food.  I hope you all had a wonderful week off.  No it’s back to business.  Fortunately I can tell you that I did not gain weight during the holiday.  That has to be a first.  My week in a nutshell….

Wednesday night was Turkey preparation.  That is a task but it smelled so good cooking throught the night.  I forgot to get a picture for you! 😦

Thursday we were blessed with another Marine family (and great friends of ours) for dinner.  We had a great time.  The meal was spectacular.  The kids all played (there were 7 of them).  After dinner, round 2 dinner, firepit, movies and champagne, my friend and I went black friday shopping.  I didn’t find a lot but enjoyed the night or early morning or whatever time it was.

Friday, we slept until 11am.  Yep you read that right 11am.  So needed the rest.  My middle son had a sleepover with some friends.  My oldest and youngest got to hang out with mom and dad.  Of course you know a 14 year old loves that.  Well Dakota 14, got his new rezigs basketball shoes that he had been saving for so of course he wanted to hang out the us…..lol..We then took them to walmart and treated them to Golden Corral.  All in all a good night.

Saturday, we put up the Christmas tree.  Now, that is totally out of the norm around here.  The tree is usually up and decorated Thanksgiving night.  -Side story-I did put up a tree on wednesday but it wasn’t the one we have put up for the last 9 years because it is so big and our house is so small.  The kids protested.  Therefore, I had to take it down and put up the other one.  We also went to see The Muppets.  Great movie.

Sunday, went to church, grocery store and put up outside decorations (pics later).  This is my favorite time of year and I love the lawn to be decorated.  We were able to get most of it done but now I just have some finishing touches to add.  Did I mention that I love Christmas?

And finally today, went to the gym.  Man a few days off will kick your butt.  It is all worth it in the end.

-Side story number 2-My husband is here at Fort Leavenworth to attend a school and get a Masters Degree.  These guys work their tails off.  They have lots of homework.  For the holidays they follow the kids school schedule which means we got Wed-Sunday off.  No work, no school, and only a small amount of homework.  I was really bummed that everyone had to go back but of course I had to get back on my exercise routine also.  It worked out for all of us!

This will be my last post for the week.  I think it may be my first one too…. 🙂

I love this time of year.  I am very excited to start decorating for Christmas.  THe only problem is that our house is much smaller this year so I have to get creative.  I hope all of my things will fit.  My husband will be so excited to decorate outside for me too!  HAHA

 

Well I have finally reached my 10 lbs mark this week.  I hope not to ruin it over the holidays.  Now, I only have approximately 5 more weeks to lose to my next goal!  I am motivated!  I can do this!  I cannot guarantee 100% clean eating but I will do my best.  I will be back next week and on track.

No Nap For Me! Friday, Nov 18 2011 

I am and have been the stay at home mom of three boys for over 14 years.  Now, I am the stay at home mom of three dogs.  What?  Yes, you read that right.  All 3 of my kids are at school.   Therefore, if I want to take a nap I do.  My reasoning, I have no one that needs me to do anything for them.  Until today.  I got up at 6:20am and fixed breakfast for my husband and kids.  Be careful the sky might fall….lol!  It’s not that I don’t fix breakfast for them but they usually eat cereal or bagels, you know quick stuff.  This morning they got biscuits and sausage gravy.  Tomorrow, biscuits, gravy, sausage patties and who knows what else I will come up with.

With all of that said, I had to skip my nap 😦 .  But not to worry, I have had the best day.  I went to the gym and did a very intense run/walk for 40 minutes.  Went shopping, went to the schools, cooked dinner and here I am.  I am not sure what it means but I didn’t feel sluggish today.  Normally around 2pm, I am falling asleep but not today.  Wonder if anyone can explain this?

As my friend and I were shopping today we got hungry.  Of course, isn’t that how it works?  My friend decided that she wanted McDonalds and I know I am not supposed to have that but it sounded so good.  Yes, I gave in to temptation.  I had a kids meal with the double cheese burger.  OH SO HORRIBLE!.  Now, I don’t normally eat hamburgers because of gallbladder problems.  I cannot tell you the last time I had a hamburger but it was so yummy.  I haven’t been drinking my protein shakes like I am supposed too so maybe that’s why I felt the need to have that nasty hamburger..Therefore, for dinner I had special k vanilla almond cereal hehe….I know, not clean.  I hope to do much better over the next few days.

I am now training for a 5k.  It is called the Rudolph Run.  I am very excited about this.  I hope I can run most of it but if not, I will be happy to just finish the run.  I will keep you posted.  Wish me luck 🙂

Chicken Tortilla Soup (My way)

 

I was in search of a good soup recipe when the weather decided to dip into the 20’s a couple of weeks ago and this is what I found.  There are a couple of options with this soup and I will give you those following the recipe…..Here it is!

  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 2 tsp. chili powder
  • 1 tsp. dried oregano
  • 1 (10.5 ounce) can condensed chicken broth
  • 1 and 1/4 cup of water
  • 1 cup of whole kernel corn
  • 1 (15 ounce) can of black beans, rinsed and drained
  • 1/4 cup chopped cilantro
  • 2 boneless chicken breast halves, cooked and chopped into bite size pieces
  • crushed tortilla chips
  • shredded monterey Jack cheese

1. In a medium stock pot, heat oil over medium heat.  Saute onion and garlic in oil until soft.  Stir in chili powder, oregano, broth and water.  Bring to a boil and simmer for 5-10 minutes.

2. Stir in corn, beans, cilantro, and chicken.  Simmer for 10 minutes.

3. Ladle soup into individual serving bowls and top with cheese and crushed tortilla chips.

  • FYI:  I top my soup with cheese, chips, sour cream, and black olives!

Additional ingredients if wanted:

  • 1(28 oz) can of crushed tomatoes
  • 1 cup of white hominy
  • 1 (4 oz) can of chopped green chile peppers
  • sliced Avacado (to top)
  • chopped green onions (to top)

I have made the soup with these additional ingredients and without.  My favorite is the recipe above.

I hope you enjoy this as much as I do.  My family also enjoys it.  Especially, on a bitter cold evening.

Cabbage, New Orleans Brats, cornbread, and blackeyed peas ( no not the group ) hehe!

I am starting a new exercise class tomorrow.  It is called Zumba Toning.  I already know that I love Zumba but I have never tried this class and I am very excited.

Wonderful Weekend! Monday, Nov 14 2011 

Due to Veterans Day and my hubby being off since Friday, we had a great weekend starting Thursday night.  Thursday was the 236th Birthday of the United States Marine Corps.  We had a bunch of Marine families over to celebrate, complete with a birthday cake.  Everyone had a great time.  It’s a big deal to gather with Marines here at Fort Leavenworth because there are so few of us.

Friday, we went to the Veterans Day parade with some friends and then to a pizza shoppe.  After all of that fun and excitement I came home and took a long nap.  I felt it was well deserved.  Saturday, we had to go get my new iphone and had friends over again.  I made soup and the kids all enjoyed smores and little weenies over the fire.  Yes, you can say it.  Busy weekend.  We took Sunday a little slower.  The only major thing was grocery shopping.  Of course, that is a necessity for the family to eat.  HAHA 🙂

My eating clean is still going well.  I did have some “treats” this weekend of course!  But I am still losing weight!  I am going to cut this post short for tonight.  Please tune in tomorrow for the recipe for Chicken Tortilla Soup.  I know you’ve been waiting!

No Chicken For Us! Wednesday, Nov 9 2011 

Gavin (my youngest) had an eye doctor appointment today so I wasn’t able to get the chicken cooked today. It takes over 2 hours to cook and it was already 5 when I got home. Therefore, the menu:
Quinoa Pasta
Spaghetti Sauce for them
Mixed veggies for me.
The meal was great anyway and tomorrow night we will have the chicken.

Had a great day at the gym altough I was dragging a little bit. For some reason I just couldn’t get motivated. Tomorrow is body step and hopefully a better work out. I love body step. I highly recommend it. Since I started eating clean and working out, I have lost 9 lbs. Way to go me.

Well, I hope to get a good pic of my delicious meal tomorrow. It should be worth sharing a picture.

Still Dealing with The Drama! Tuesday, Nov 8 2011 

I really do not have much to post tonight.  I am still dealing with the weekend drama of having my things stolen.  I was able to get a new military ID.  YAY.  I have to wait almost two weeks to get my DL from LA! 😦

 

My eating was really off today.  I didn’t even have a bite to eat until almost noon.  I drank a lot of coffee today.  Guress that’s not really nutritious but it was that kind of day!

Now, tomorrow I should have a good bit to tell. For dinner I will be making a whole Chicken (baked like I would make my Turkey), Baby Yellow Potatoes (organic), and some type of veggie.  Yummo, I can hardly wait…..
